A Different Bean Party Dip

My husband’s best friend turned 40 recently and we were invited to a big party. His wife asked me to bring some sort of appetizer or snack. Since she asked everyone to bring something, I was looking for something a little different. Bean dips are usually pretty popular at these kinds of events, but I didn’t want to bring just plain refried beans. I started looking and came across this white bean spread recipe. Sounded pretty good and I thought it might go well with bagel chips.
I cooked the beans early in the day and then put the dip together about 30 minutes before we left. I think it took me about 5 minutes to blend it together and transfer it to a bowl. After that it was just a matter of grabbing the bag of bagel chips and we were out the door. The dip was gone about 2 hours into the party, so I’m assuming everyone else liked it as much as I did. Quite a few people asked me how I made it. It’s not every day that someone asks you about bean recipes. I’ll definitely be making this again, since it’s fast and pretty healthy and goes with almost anything from crackers and chips to bread and veggies.
